Organic Palm Jaggery is a type of jaggery (also known as gur) made from the sap extract of palm trees that thrive in South India. It is also produced in the regions of West Bengal, Sri Lanka, Bangladesh and Pakistan.
Palm jaggery is popular in the southern districts of Tamil Nadu, where it is known as karupatti vellam and is often used instead of sugar. In West Bengal, palm jaggery is well-known as the famous Nolen Gur, which is the key ingredient in many winter delicacies.
Palm jaggery is processed from the unfermented sap of palm trees. These palm trees are about 15 to 20 years old, which is when they start to flower and produce the sweet sap (also known as sweet toddy, palm vine). The palm tappers, who are extremely agile, climb the palm trees to tap and make a small cut into the tree. From this cut, the sap flows out and is collected in an earthenware pot or gourd, which is hung close to it.
If youre ever lucky enough to be on a farm when the fresh palm sap is brought in, you will find that it is extremely pleasing to the taste and smell. This fresh sap is boiled immediately after it is collected. If this is not done, then it ferments into a sour, potent brew, which is poisonous and not fit to consume the next day.
To make solid jaggery, the boiled and evaporated palm vine is poured into bamboo jars, coconut shells, or baskets made from palm leaves.
Organic Palm Jaggery is also used as a natural sweetener and energy food.
