Fenugreek seeds have a pungent aroma and a slightly bitter taste, which is described as burnt celery. They are often roasted to reduce the bitterness and enhance the flavour. These seeds can be used whole in spice mixes like panch phoron or ground to fine powder to be added to pickles.
