Cardamom is commonly known as elaichi in India, and it is found in most Indian households.

It is one of the earliest spices in the world and is regarded as the Queen of Spices. Regarding price, cardamom ranks third after saffron and vanilla.

Cardamom is known to have originated in India, Nepal, and Bhutan, where its first cultivation began in the tropical and humid climate of the Western Ghats in India.

Structurally, cardamom is a small greenish pod with a sharp, unique, spicy- sweet or camphor- like flavour. The outside of the pod can be of many colours depending on the region of production. Primarily there are two varieties of cardamom  the small elettaria variety, which is the green or true cardamom, and the larger amomum variety, which is the black, white, or red variety.

Green cardamom is the variety of cardamom that is picked while the pod is still immature and sun-dried to preserve its bright green colour. Green cardamom pods are harder to find and more expensive than the other forms of cardamom because of their superior ability to retain aroma and flavour for a longer period.

The humble green pods of cardamom impart a sweet taste and unique flavour to the dish when added. Green cardamom is known to contain many plant-derived compounds, which have health promoting and disease preventing properties.
