Gulkand or Gulqand is a sweet preserve of rose petals from the Indian subcontinent. 'Gul' means flower in both Persian and Urdu and 'qand' means sweet in Arabic. Other names given to Gulkand are Rose Jam, Rose Petal Jam and Rose Petal Jelly.
Organic gulkand is made by placing the rose petals and sugar in alternate layers in a wide-mouthed airtight glass jar. This pot is put in the sunlight for 6 hours per day for around 3 to 4 weeks. On alternate days, the content of the pot is stirred with a wooden stick. Other ingredients, such as silver foil, cardamom seeds or Muktapishti (i.e. powdered pearl) can be added to enhance the cooling properties of the gulkand.
In Ayurveda, Gulkand is used as a tonic to reduce pitta and heat in the body. It is known to be a good remedy for acidity.
In India, it is mostly eaten with Paan as a mouth freshener and a digestive.

How to store
Stored in an airtight container and kept in the refrigerator. It can be used for months if refrigerated.
