Bay leaves are known as "tej patta" in the Indian kitchen. They are the dried aromatic leaves of the bay tree.

Bay leaves are known to have originated in the Asia Minor region, from where they spread to the whole Mediterranean region and other parts of Asia. These dried leaves are 1-3 inches long, oval in shape, pointed, and smooth in texture.

Fresh bay leaves are dark green colour and upon drying turn into a matte olive green shade. These dried leaves can be stored for months.

Bay leaves have been well recognised and used as culinary spice for years. They impart a pleasing and sweet aroma when added to a dish.
