Sesame seeds are known to be one of the first seasonings and are the oldest oilseed crop in the world. It was domesticated over 3000 years ago and is native to India. The oil content in sesame seeds is the highest of all other seeds.

These seeds are tiny, flat, oval, and come in shades of brown, red, and black. The most common colour is pale greyish-ivory. Sesame seeds have a nutty, sweet aroma with a milk-like, buttery taste. These seeds are the main ingredient in tahini (sesame seed paste), used to make dishes like hummus and the Middle Eastern confection.

The white sesame seeds are called til in India. These seeds have a delicate nutty flavour. Their flavour indeed becomes more pronounced once they are gently roasted over a low flame for a few minutes. These seeds are used liberally in cooking.

It is used to add crunchy texture to Asian stir-fries, in sushi, coatings for meat or fish, noodle dishes, and they can be mixed with black sesame seeds for a contrasting garnish.
