Raw sugar is cane sugar, which has been minimally processed. It is the most natural form of sugar you can find.
Unlike white sugar, raw sugar is not fully refined. It is made from organic sugar cane juice, which through evaporation is reduced to a solid mass. This solid mass of sugar is spun in a centrifuge to get sugar crystals, which is further dried to produce granules. These raw sugar granules are light brown in color due to the presence of molasses.
Compared to regular white and brown sugar, raw sugar holds more minerals because it is not fully processed, due to which its minerals are not lost.
