Organic brown sugar, in simple words, means white sugar that contains molasses. Molasses is the thick, dark, and sweet substance made during the extraction of sugar from sugar cane and sugar beets. It is the essential element in brown sugar that is responsible for the characteristic brown colour and rich flavour.
Depending on the variety, brown sugar can of two types refined brown sugar or unrefined brown sugar.
The refined brown sugar is the type in which molasses is added back to the refined white sugar. This sugar is the commercial variety and is commonly thought of as brown sugar. It is usually moist and soft. The unrefined brown sugar is the type in which the sugar still contains some molasses from the initial sugar refining process. This kind of brown sugar is not as soft and moist like refined brown sugar.

Brown sugar is valued for its deep, rich flavour and colour. It is similarly used like white sugar except that it provides a touch of extra flavour. It also contains a slightly higher mineral content that the regular white sugar due to the presence of molasses.
Brown sugar is commonly used to sweeten baked goods, beverages, sauces, and marinades. If your recipe in hand does not specify which brown sugar to use, then you can use whatever you have. However, if you want a deeper flavour, choose dark brown sugar. If you dont want the molasses to overpower the other flavours in the dish, then go with the light brown sugar.
