Sonamasuri polished rice is a type of Indian white rice largely grown in the Indian states of Andhra Pradesh and Karnataka. It is a medium-grain, light weight, and aromatic rice.
Polishing is the process that removes the outer bran layer of the rice grain, leaving a core comprised of mostly carbohydrates. It alters the flavour, texture, appearance, and nutritional value of the rice. It makes the rice lighter and easily digestible.
Sonamasuri rice is used in dishes such as sweet pongal, biryani, and fried rice.
