Palm sugar is a natural sweetener. It is an excellent substitute for white sugar because it is nutrient rich, unrefined, and it dissolves and melts almost like white sugar.
Organic Palm Sugar is made from the sap of palm trees that are about 15 to 20 years old, which is when they start to flower and produce sweet sap (also known as sweet toddy). The palm tappers, who are extremely agile, climb the palm trees to collect the sap. They tap and make a small cut in the inflorescence from which the fluid flows out and is collected in an earthenware pot or gourd that is hung close to the cut.
If youre lucky to be on a farm when the fresh palm sap is brought in, you will find that it has a taste of ambrosia i.e. it extremely pleasing to taste and smell.
This fresh sap is boiled immediately after it is collected. If this is not done, then the fresh juices ferments into a sour, potent brew that is poisonous and not fit to consume the next day.
The fresh sap is boiled down and evaporated into concentrated nectar that is then poured into either bamboo jars, coconut shells, or baskets made from palm leaves. These solid palm sugar cylinders, blocks, or cakes are then used to make powdered palm sugar. The colour of palm sugar varies from light golden to rich dark brown.
Organic palm sugar is used in cooking many dishes, be it desserts or curries.
