Black pepper is known as Kali Mirch' in India. It comes from the berries of the peppercorn plant.
Black pepper is recognised as the "king of spices". It has been a well-known and popular spice for thousands of years. It was not only used as spice but also as currency to trade and pay taxes and as a sacred offering to honour gods.
Black pepper is made by picking half-ripe berries and leaving them to dry which causes these berries to shrivel and become dark in colour.
The peppercorn plant is native to Kerela, the southern state of India, from where it spread to rest of the world. The finest Indian black pepper is cultivated in the monsoon forests of the Malabar Coast in Kerala.
There are three different varieties of pepper- black pepper, white pepper and green pepper. All of these varieties come from the same plant and differ by the peppercorn berries being picked at separate stages of ripening and then being processed differently.
Black pepper is the most flavourful and pungent of all types of pepper.
