Cinnamons sweet, warm, and aromatic taste makes it a perfect spice to use during the winter months. It is commonly known as dal chini in India.

Cinnamon is reddish-brown bark harvested from peeled, dried and rolled barks of the cinnamon tree. It is available in two forms- whole quills (i.e. cinnamon sticks) or as grounded powder prepared by roasting and crushing whole quills.

It is known to be one of the oldest spices in the world. Consumed since 2000 BC in Ancient Egypt, cinnamon has not only been used for flavouring beverages and as medicine but also as an embalming (i.e. mummified) agent.

There are two main varieties of cinnamon Ceylon cinnamon produced in Sri Lanka, India, Madagascar, Brazil, and the Caribbean's, and Cassia cinnamon, mainly produced in China, Vietnam and Indonesia.

Cinnamon is commonly used for flavouring cakes, chocolate dishes and fruit desserts, particularly apples and pears.
